Why take this rather than piece it together on YouTube?

The information is all out there. The problem is the sequencing. YouTube throws you a mix of marketing videos, three year old advice that is no longer current, and expert content written for people who are already past the beginner wall. Figuring out which is which is itself a skill, and most beginners do not yet have it.
